Method :

 

  1. Hard boil 6 eggs keep one for mornay.

  2. Refresh and scale eggs.

  3. Cut in halves, sieve yolk.

  4. Prepare duxelles (chopped onion + mushroom in butter).

  5. Prepare mornay with duxelles, chopped parsley and seined yolk.

  6. Mix ¼th mornay with duxelles, chopped parsley and seined yolk.

  7. Garnish halves of eggs with filling.

  8. In a buttered dish arrange eggs cover with sauce and cheese.

  9. Glaze / gratinate.
