CASHEW POTATO CURRY

Ginger

Red Chillies

A pinch

Garlic

5gms

Turmeric

10gms

Coconut

½ no.

Coriander seed

5gms

Oil

50ml

Onion

250gms

 

1 sprig

Salt

To taste

Curry leave

1 pinch

 

 

METHOD

 

  • Peel and cut potatoes into 3 pieces. Soak cashew in warm water. Grate coconut and extract coconut milk.

  • Boil potatoes and cashew in coconut extract.

  • Grind into a paste onion, red chilly, coriander, cumin and turmeric. Slice onions and split green Chillies.

  • Heat oil add mustered and curry leaves, add ground spiels and sliced ingredients, cook till onions are soft.

  • Add potatoes, cashews, lime slice, salt and summer for 10mins.

  • Check for seasoning and serve.
